Ingredients

  • ¾ cup cottage cheese (2% or 4% both work)
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 ¼ cups super fine blanched almond flour
  • 1 cup oat flour
  • ⅛ tsp fine sea salt (or ¼ tsp for more salt)

Instructions

  1. Place cottage cheese, maple syrup, and vanilla extract in a blender (I use my Nutribullet). Blend until smooth.
  2. Pour mixture into a medium mixing bowl. Add almond flour, oat flour, and salt. Mix until combined then stir into chocolate chips.
  3. Roll into 16-18 smaller bites (or make them bigger, up to you!). They’re a little bit more moist/sticky than your classic energy bite, but should easily roll. Store in the fridge for up to 1 week.
