Ingredients
- ¾ cup cottage cheese (2% or 4% both work)
- ¼ cup pure maple syrup
- 1 tsp vanilla extract
- 1 ¼ cups super fine blanched almond flour
- 1 cup oat flour
- ⅛ tsp fine sea salt (or ¼ tsp for more salt)
- ⅓ cup chocolate chips (i like a combo of mini and regular)

Instructions
- Place cottage cheese, maple syrup, and vanilla extract in a blender (I use my Nutribullet). Blend until smooth.
- Pour mixture into a medium mixing bowl. Add almond flour, oat flour, and salt. Mix until combined then stir into chocolate chips.
- Roll into 16-18 smaller bites (or make them bigger, up to you!). They’re a little bit more moist/sticky than your classic energy bite, but should easily roll. Store in the fridge for up to 1 week.
